More than 30 years ago, the Chef began what would become a true passion: the search for the best examples of cattle he could find in the regions of León, Asturias, Cantabria, Galicia and Northern Portugal. The free and long raising of these animals in the field and, afterwards, the excellent maturation of the meat are other aspects that José Gordón dedicated his life to improving. The result can be proven at 1828, on a tasting menu or à la carte.
